I find systems of systems to be generally fascinating. I was lucky enough today to find Urban Omnibus (a project by the Architectural League of New York) which has a series called "City of Systems" covers various systems in New York City, from skyscraper HVAC to waste removal to traffic light control. Here are my favorites so far (there are a total of four videos in the series; I didn't find the piece on the Verrazano-Narrows Bridge to be all that interesting from a systems point of view).
